Sean Bromley teaches a full-day course on growing gourmet mushrooms on inoculated logs at The Organic Centre in Rossinver on Sunday 8 November 2026, 10am to 4pm, priced at €110. Bromley is a woodland practitioner with more than 15 years in permaculture, organic horticulture and community forestry, and the method he teaches is deliberately low-tech: take waste timber, drill it, plug it with spawn, seal it, and let it work.
The day runs through mushroom biology and ecology, selecting, cutting and preparing timber, the drilling, plugging and waxing itself, then managing the spawn run over the six to eighteen months it takes before the logs start to fruit, harvesting, and what to do with a glut once the logs are producing. Species covered include shiitake, oyster and lion’s mane. Everyone goes home with shiitake dowels to inoculate their own logs. Tea, coffee and treats are served on arrival and soup and bread are included at lunchtime. Booking is through the centre’s online shop.
The Organic Centre is at Rossinver in north Leitrim, near the shore of Lough Melvin and signposted from the R281 and R282. Allow roughly 20 minutes from Manorhamilton, 25 minutes from Bundoran and about 45 minutes from Sligo city. Parking is on site. There is very little public transport into Rossinver, so drive or arrange a lift, and dress for November weather since part of the day is spent handling timber outdoors.
