The Organic Centre runs its fermentation teaching as a full weekend masterclass rather than a single afternoon, and the autumn 2026 dates are Saturday 5 and Sunday 6 September. The tutor is Matthew Cater and the fee is €220 for the two days. It sits in the centre’s food and preserving strand alongside cheesemaking, wine and cider making, and the various foraging courses that run through the same season.
Two days allows the subject to be covered as a practical craft rather than a demonstration. Fermentation depends on time, temperature and salt working together, and most of the useful learning is in handling the variables and recognising what a batch should look, smell and taste like at each stage. Early September is a sensible point in the year for it, with the late-summer vegetable glut arriving and the centre’s own growing beds in production on the nineteen-acre Rossinver site. Places are booked in advance through the centre’s online shop, and numbers on masterclasses are limited. The centre also offers reduced rates for students and people on income supports, which are arranged by contacting the office directly rather than through the website.
The Organic Centre is signposted off the R281 near Rossinver in north Leitrim, on the road running between Manorhamilton and Kinlough on the southern side of Lough Melvin. Manorhamilton is roughly 20 minutes by car, Kinlough and Bundoran 20 to 25 minutes, Enniskillen about 45 minutes and Sligo town around 50 minutes. There is free parking on site. Public transport to Rossinver is very limited, so participants generally drive or car share, and the final approach is on narrow rural roads worth allowing extra time for.
