The Brehon Hotel launches a chef collaboration dinner at its Danu restaurant in Killarney on Saturday, 17 October 2026, pairing Portuguese chef Hugo Alves of Norma with The Brehon’s own head chef, Chad Byrne. The evening is built around a single exclusive six-course tasting menu rather than the restaurant’s regular a la carte service.
Alves brings his signature Portuguese style to the collaboration, working alongside Byrne to build a six-course menu that blends the two chefs’ approaches rather than simply splitting the courses between them. Expect a proper sit-down tasting menu format over four hours, from 5:30pm to 9:30pm, in Danu, the hotel’s fine-dining restaurant overlooking Killarney National Park. Alves cooks at Norma in Portugal and comes to Killarney as the guest half of the pairing, with Byrne, a long-standing figure in the Kerry food scene, hosting on his own pass. At €70 per person, it is priced as a genuine occasion dinner rather than a casual meal, and the four-hour sitting is built to be worked through slowly rather than turned over. The format suggests The Brehon plans to run further instalments of the series with different guest chefs, though only this date is confirmed for now, so anyone hoping to catch the collaboration should treat it as a one-night booking rather than wait for a repeat.
The Brehon is on Muckross Road, just south of Killarney town centre, with on-site parking. Killarney’s rail and bus station is a short taxi ride away, with direct trains from Cork, Dublin Heuston and Tralee.
A tasting menu dinner here pairs well with a day walking Killarney National Park, which is on the hotel’s doorstep. There is more to see in Killarney and across Co. Kerry.
